Kaju Barfi is a sweet dish of Indian subcontinent which is made with Cashew paste, sugar and ghee.
What is Kaju Barfi?
Kaju Barfi is a traditional Indian Mithai (sweet) made during festivals specially in Diwali.
Batterd kaju(cashew nuts)is mixed with sugar, water, ghee is spread on tray or dish to cut the diamond shape barfi and covered with silver wok.

An incredible Indian sweet recipe which is made for every one of the festivals, events and celebration seasons.
Ingredients
- Cashew Nuts 1cup.
- Sugar 1cup.
- Water ½cup.
- Ghee 1tsp.
- Cardamom Powder ½tsp.
Tools
- Frying Pan
- Aluminum Baking Tray
- Edible Silver Leafs
Preparation
Take 2cups of cashew nuts on mixer grinder and grind it to fine powder. Blend the cashews on pulse button to avoid release oil and form paste.
Take out the cashew powder from the mixer grinder and sieve well and make it lump free.
Heat on a pan and add 1cup sugar followed by ½ cup water .
Stir the solvent until the sugar dissolves with water and form a syrup.
Check the consistency to form a string
Add the powdered cashews and stir well.
Stir continuously until the mixture form a paste.
Now mix the paste by adding ½ tsp of ghee and stir.
Add ¼ tsp of cardamom powder to the ingredients and stir.
Stir and cook continuously until the mixture leave the pan.
Now pour the mixture on a butter paper finely greased with oil.
Now fold and gently press the butter paper to form a dough.
Put the cashew dough between the butter paper and roll it using a rolling pin.
Roll it to make slightly thick in uniform manner.
Grease with oil and apply silver leaf coating
Now cut in diamond shape or any shape to make the kaju katli/barfi and store it for the festive season to come.
